SWEET POTATOES Preheat Oven to 350 6 Sweet Potatoes (or Yams) 3 Medium Red Apples 2 Tbsp. Butter, Divided 1/4 c. Packed Dark Brown Sugar 1/8 tsp. Cinnamon 1/8 tsp. Allspice 1/4 c. Rum 1/2 c. Orange Juice Large Marshmallows (optional) Boil or steam potatoes until tender. Remove skin and cut lengthwise into slices. Peel, core and slice apples into rings. Grease 9x6 in. dish with 1 Tbsp. butter. Alternate potatoes & apples in layers until full. Pour combined O.J., sugar, spices, rum and remaining 1 Tbsp. butter (melted) over potatoes and apples. Bake uncovered 30 min. or until brown & shiny/liquid absorbed. If desired,after baking, layer with halved marshmallows and brown. Contributed by: Marcy Vaughn
